Your interpretations is error because the bible says there is only one God. So what Thomas meant is Jesus is god, not God. Or He meant with explanation "my God" out of shock. It seems clear to me that it is latter.

This is still out of context reasoning considering other Scriptures I mentioned above.

The Scripture does not contradict, if we believe it is full of contradiction, we are not Jesus' followers. Jesus' followers believe that the Scripture is God brethed.
